I'm a genuine oatmeal cookie monster... I just counted, as well as January 2018, I've shared 47 oatmeal cookie recipes along with you. Eep! Have you ever tried any of these yet? (? You'll locate all my oatmeal cookie recipes right there!) They're some of the most well-known recipes in my website because they taste very sweet and cozy, just like traditional"indulgent" oatmeal cookie recipes, but they include no refined sugar or bread!
So you are going to start with whole wheat flour (or gluten-free, if you want ) and immediate oats (such as those... or these for a gluten-free edition!) . Instant oats are smaller and thinner than conventional rolled oats, and you are able to locate them at canisters right alongside those old-fashioned oats at the grocery store.
I probably sound like a broken record by now... But cause I ? you and need your cookies to turn out perfectly plump and soft, I'm reminding you ... Measure your yogurt and bread properly, using this technique or a kitchen scale! (? That's the one I have and love. It just cost $20!) Too much of either side will make your biscuits taste cakey or dry, as opposed to chewy. This is especially true of this oats--they behave like little sponges and soak up plenty of moisture from your cookie dough!
Ripe bananas- ideal for baking! Love all @amybakeshealthy's yummy & healthful banana recipes!
Watch those bananas? And all those brown spots? If it comes to baking bananas, brown = beautiful! I ? additional speckly bananas because they have a lot bright, bold flavor--along with extra sweetness! That's the minimum number of brown which I recommend. More is even better!
The remainder of the cookie dough's sweetness comes from a different organic ingredient... Pure maple syrup (like that!) . You want the kind that comes straight from pine trees, which is typically offered in sparse glass jars or squat, round plastic jugs. Forget the pancake sugar and sugar-free syrup!

The raisins add even more natural sweetness! The recently purchased, extra plump, perfectly tender ones are perfect... But for those who have elderly, slightly dried out raisins (hmm... it sounds absurd to describe dried fruit as dried outside! ) , that is okay!
Only add them into some microwave-safe bowland put water on top till they're completely covered. Seal plastic wrap over the top, and then microwave the bowl on high for 1 minute. If you allow the peppers sit while mixing together the cookie dough, then this small hint hydrates them they're exceptionally juicy--and that makes a big difference in these cookies as soon as they're baked!

Healthy Banana Oatmeal Raisin Cookies
Yields: 15 biscuits
The recognizable comfy spices and plump raisins make them even more irresistible. They will keep for a minumum of one week if stored in an airtight container in the fridge --should they last that long!
1 cup (100g) instant oats (fermented if required and measured like that )
3/4 cup (90g) whole wheat or fermented * flour (quantified like this)
1 1/2 tsp baking powder
1 1/2 tsp ground cinnamon
1/4 tsp salt
1/4 cup (63g) mashed banana
1 tsp vanilla extract
In a medium bowl, whisk together the oats, flour, baking powder, cinnamon, and salt. Stir in the maple syrup. Add in the flour mixture, stirring just until incorporated. Fold in the raisins. Let the cookie page dough rest for 10 minutes.
Preheat the oven to 325°F, plus a baking sheet with a silicone baking mat or parchment paper.
Using a spoon and spatula, drop the cookie dough into 15 curved scoops on the prepared sheet, and flatten to the desired thickness and width using Banana Oatmeal Chocolate Chip Cookies Two Peas & Their Pod a spatula. Bake at 325°F for about 10-12 minutes.
Notes: It is extremely important to measure both the wheat and oats correctly utilizing this method or even a kitchen scale. (? That's exactly the one I own and enjoy!) Too much of either would dry out the cookies and render them cakey instead of chewy.
Immediate oats are also referred to as quick-cooking or moment oats. They arrive in huge canisters, just like conservative oats. They are not the ones at the small flavored loaf of bread. To create your own, add the same number of conservative yogurt into your food processor, and pulse 10-12 times or until the oats will be approximately 1/4 to ? of their initial size.
For the fermented flour, I recommend the following mix: 1/2 cup (60g) millet flour, two tablespoons (15g) tapioca flour, two tbsp (15g) brown rice flour, as well as 1/2 tsp xanthan gum. Most store-bought gluten-free flour blends (like that one!) Will also do the job, if measured like this.
For the best results, use the ripest and spottiest bananas you'll be able to find!
In case your pancakes are old, drier, and not too plump or juicy... Add them to a microwave-safe bowl, and pour water at the top till they're completely covered. Seal plastic wrap over the top, and then microwave the bowl on high for 1 second. Should you allow the peppers sit while mixing together the cookie dough, this little trick hydrates them so they're really soft and succulent!
